Omega-3s
Long-chain omega-3s found in fatty fish (or in high-quality purified fish oil supplements) reduce inflammation. In cell cultures, they reduce cancer cell growth in a large number of tumors (lung, breast, colon, prostate, kidney, etc.). They also act to reduce the spread of tumors in the form of metastases. Several human studies show that the risk of several cancers is significantly lower in people who eat fish at least twice a week.125,126,127,128,129,130,131,132ai
Take note: The bigger the fish (for example, tuna, but especially dogfish, shark, and swordfish), the higher it is in the food chain and the more contaminated it is by mercury, PCBs, and dioxin, all of which pollute the ocean floor. The best sources of fatty fish are small fish, such as whole anchovies, small mackerel, and sardines (including canned sardines, provided they are preserved in olive oil and not in sunflower oil, which is too rich in omega-6s). Salmon is also a good source of omega-3s, and the level of contamination is still acceptable. Frozen fish progressively loses some of its omega-3 content over the course of conservation.
Flaxseeds are rich in short-chain vegetal omega-3s and also in lignans. These phytoestrogens allay the harmful effects of hormones that promote cancer growth. They have also been linked to lower cholesterol and attenu ation of spikes in blood sugar levels. For example, 50 grams (1.75 ounces) of flaxseed-enriched bread produces an increase in blood sugar levels that is 30 percent less than that seen in response to the same quantity of white bread. In a recent study at Duke University, daily intake of 30 grams of ground flaxseeds slowed the growth of existing prostate tumors by 30 percent to 40 percent. 136 In France, researchers working with Professor Philippe Bougnoux, an oncologist specializing in omega-3 research, reported that women with breast cancer whose tissue samples were richer in omega-3 fatty acids derived from plants (such as flaxseeds, nuts, and canola oil) had a significantly lower risk of developing metastatic tumors.137
Flaxseeds may lead to digestive problems comparable to those observed with other foods rich in fiber, especially in persons whose colons are particularly sensitive. In this case, daily consumption should be limited to no more than 45 grams.
Recommendations for use: Grind the seeds in a coffee grinder and mix the powder with organic milk or soy milk (or an organic or soy yogurt). The powder can also be mixed with breakfast cereals. Or stir the powder into a fruit salad to give it a nutty flavor. Ground flaxseed can be replaced by flaxseed oil, which is easier to use (though it doesn’t contain as many lignans), but be sure to keep this oil in the refrigerator in a lightproof bottle to avoid oxidation (as well as a rancid smell). It is advisable not to store it more than three months.
